Homemade Hamburger Helper

I want share a quick night meal that has long been a staple in my home. It’s quick, simple and makes much more than the boxed alternative.

Homemade Hamburger Helper


1lb Ground beef or chuck

1 medium onion

Seasonings to taste, salt pepper, garlic powder or salt,

½ tsp paprika (optional)

1  1 lb bag egg noodles

2-3 tbl Beef bouillon, here I use the large container of dry beef stock base, or Au jus powder. I prefer the Au jus myself.



How to make:

Chop onion and in large deep sided skillet add beef, onion and seasonings. Sauté until browned, drain any unwanted grease. In same pan if large enough, or transfer to a large pot. Combine meat beef bouillon, 3 cups water. Stir and bring to a boil. Add noodles and water enough just to cover noodles. Cover and simmer for 8-10 minutes. Check noodles for doneness. Quickly put a couple tablespoons cornstarch in a mug or bowl, add just a tablespoon or 2 of water, stir till smooth and add to pot, stirring to distribute. Stir pot as mixture thickens. If it is still too thin make more of the cornstarch slurry, adding a little at a time. When the sauce has reached your desired consistency, taste and season if needed.  Serve with bread and butter and a salad if you’d like.
